Banana bread mug cake

Hey —

The mug cake from our reel: banana bread flavour without baking a whole loaf. Blend it, pour it into a mug, microwave it until it’s set, and top it. It works for breakfast or an afternoon snack.

What you need

Tap each item as you get it out.

How it comes together

  1. Blend the egg, banana, oats, almond milk, maple, vanilla, cinnamon, baking powder, and salt into a smooth batter.
  2. Lightly grease a wide mug with oil spray and pour the batter in.
  3. Scatter chocolate chips on top.
  4. Microwave until the center is set.
  5. Top with Greek yogurt, a dusting of cinnamon, and a drizzle of maple.

Swaps and serving ideas

  • A wide mug helps it cook evenly, so the middle sets at the same time as the edges.
  • Use whatever milk you already have if almond milk isn’t in the fridge.
  • Breakfast or a snack: it works for both.

The shape

  • Protein you can get fast: egg in the batter, plus Greek yogurt on top
  • Produce: ripe banana, blended right in
  • Carb you already use: oats

Starting vs already tracking

  • Curious / restarting: one mug, one log. A breakfast this simple is easy to repeat.
  • Already tracking: save the mug cake as a recipe once; the toppings are the part that changes.
