No-bake pumpkin cookie dough bites

Hey —

Our fall snack from the reel: a cookie-dough base with pumpkin and spice, a chocolate layer on top, and no oven. Make one pan, cut it into squares, and keep them in the freezer for when you want something sweet.

What you need

Tap each item as you get it out.

How it comes together

  1. Line a square pan with parchment.
  2. Mix the almond butter, pumpkin, maple, softened coconut oil, and pumpkin pie spice until smooth.
  3. Stir in the almond flour until it feels like cookie dough, then fold in some of the chocolate chips.
  4. Press it into the pan and freeze until firm.
  5. Melt the rest of the chocolate chips with a little coconut oil in the microwave, stirring often, and spread it over the base.
  6. Sprinkle with salt and freeze until the chocolate is set.
  7. Cut into squares and keep them in the freezer.

Swaps and serving ideas

  • Use maple syrup or a sugar-free syrup, whichever you already have.
  • Keep the squares in the freezer and grab one as you need it.

The shape

  • Protein you can get fast: almond butter and almond flour in the dough
  • Produce: pumpkin purée
  • Carb you already use: maple syrup and chocolate chips

Starting vs already tracking

  • Curious / restarting: a snack you planned is a snack you can log. One square, one entry.
  • Already tracking: save the whole pan as a recipe in your app, then log the squares you eat.
